Ingredients

  • 1 lb of Apple Chicken Sausage
  • 1 Tablespoon of Olive Oil
  • 1 Medium, Yellow of Onion
  • 3 Medium of Apple Chicken Sausage Soup
  • 3 Celery Stalk(s)
  • 3 Minced of Garlic Clove(s)
  • 6 Cups of Bone Broth
  • Apple Chicken Sausage Soup
  • 1 1/2 Tablespoons of Salt
  • 1 Teaspoons of Thyme
  • 2 Cups of Spinach
  • 1 Fresh Lemon Juice
  • 1/4 Cup of Grated Parmesan

Instructions

  • Slice the sausage and carrots into medallions. Dice the onion and celery.
  • Heat olive oil in a large soup pot over medium heat. Add sausage and cook, until fully browned and cooked through.
  • Add diced onion, carrots, and celery directly into the pot with the meat. Stir and cook until slightly softened and fragrant.
  • Add minced garlic, salt, and thyme. Stir and cook briefly until fragrant.
  • Pour in chicken bone broth and stir to combine. Bring to a gentle boil, then reduce heat to a simmer.
  • Cover and simmer until vegetables are fully tender.
  • Stir in spinach and cook just until wilted.
  • Remove from heat and stir in fresh lemon juice. Serve and top with grated Parmesan.
