Description

Deliciously salty bacon bakes up crisp with a glossy, caramelized coating that delivers the perfect balance of sweet and savory in every bite. Rendering the bacon first removes excess grease so the final coating sticks cleanly without becoming heavy or oily. Simple ingredients create that classic candied texture with a rich flavor that rivals any store bought version. Finished in the oven for an even caramelization, this method keeps the bacon crisp while allowing the sugar to fully set.

Ingredients

  • 8 Slices of Nitrate-Free Bacon
  • 1/4 Cup of Brown Sugar
  • 1 Tablespoon of Maple Syrup
  • 1/2 Teaspoon of Black Pepper

Equipment

  • Baking Sheet
  • Unbleached Parchment Paper
  • Tongs
  • Fine Mesh Stainless Steel Strainer
  • Large Mason Jar

Instructions

  • Make sure the wire rack is secured in the drip pan. Lay the bacon slices evenly across the wire rack, ensuring they do not overlap.
  • Place in the oven a turn the oven on to 425°F.
  • Bake for 12 to 15 minutes until the bacon has rendered its fat and is partially cooked but not yet crisp. Remove from the oven.
  • Line the baking tray with parchment paper. Add the bacon to a parchment lined baking sheet.
  • Drain the grease through a strainer into a mason jar to keep for future uses.
  • Sprinkle the brown sugar on top of the bacon strips, drizzle on the maple syrup, freshly grind the black pepper if using. pack on the mixture. Flip the bacon strips over and do this process on the other side.
  • Return the bacon to the oven and bake for another 10 to 15 minutes until the coating is bubbling and caramelized.
  • Remove from the oven and allow the bacon to rest on the rack for 5 minutes so the coating sets and becomes crisp.

Notes

Use thick cut bacon so it holds up during the two stage baking process and does not become too brittle. Watch closely during the second bake as the sugar can go from perfectly caramelized to burnt quickly. For a deeper flavor, lightly press the sugar mixture into the bacon so it adheres better during baking. Let the bacon cool on the rack instead of paper towels so the coating stays crisp instead of sticky.
