Description

Tender diced chicken simmers in a buttery seasoned broth until juicy and flavorful. Hand rolled evaporated milk dumplins cook directly in the pot until soft and comforting. The dumplins naturally thicken the broth without cream soup or a flour slurry. Classic Southern flavor makes this a cozy and satisfying homemade meal.

Ingredients

Dumplins

  • 2 Tablespoons of Butter
  • 1 Cup of Evaporated Milk
  • 2 Cups of All-Purpose Flour

Chicken Base

  • 1 lb of Chicken Breasts
  • 1/2 Teaspoon of Salt
  • 2 Cups of Bone Broth

Broth

  • 4 Tablespoons of Butter
  • 2 Cups of Bone Broth
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Garlic Powder
  • 1/2 Teaspoon of Onion Powder

Instructions

  • Bring the butter and evaporated milk to room temperature.
  • Add the chicken breast, salt, and chicken bone broth to a large heavy bottom soup pot or Dutch oven. Bring to a boil and cook for 10 minutes or until the chicken is fully cooked.
  • Shred the chicken. Reduce the heat to low.
  • Add the flour and room temperature butter to a clean work surface. Work the butter into the flour with a fork or clean hands until evenly incorporated.
  • Slowly add the evaporated milk and mix until a dough forms. Knead the dough a few times just until smooth.
  • Roll the dough to about ⅛ inch thick. Cut the dough into strips and then into squares with a pizza cutter or knife.
  • Add the 4 tablespoons butter, remaining 2 cups chicken bone broth, ½ teaspoon salt, garlic powder, and onion powder to the pot. Bring the broth to a gentle boil.
  • Add the dumplins a few at a time, gently pushing them beneath the broth with the back of a spoon.
  • Cover, and cook for 30 minutes. Gently stir once or twice during cooking to prevent the dumplins from sticking.
  • Stir in the remaining ¼ cup evaporated milk. Simmer uncovered over low heat until the broth naturally thickens.
  • Remove the pot from the heat and rest for 5 minutes.

Notes

Knead the dough only a few times to keep the dumplins tender
Roll the dough thin for soft noodle style dumplins
Add the dumplins gradually so they do not stick together
Stir gently after adding the dumplins so they do not break apart
