Description

Ingredients

  • 1 Large of Sweet Potato(es)
  • 1 Bell Pepper(s)
  • 1 Small Yellow of Onion
  • 2 Tablespoons of Olive Oil
  • 1 lb of Grass Fed Beef
  • 3 Minced of Garlic Clove(s)
  • 2 Teaspoon of Salt
  • 2 Teaspoons of Paprika
  • 2 Teaspoons of Garlic Powder
  • 2 Teaspoons of Onion Powder
  • 2 Cups of Spinach
  • 1 Ripe Avocado
  • 1/4 Cup of Feta

Equipment

Instructions

  • Preheat the oven to 425°.
  • Peel and dice the sweet potato, dice the bell pepper, dice the onion, mince the garlic, and dice the avocado. Make sure to dice all of the produce the same size. I prefer smaller dices.
  • Add the sweet potatoes to a baking sheet and cover with 1 Tablespoon of olive oil and 1 Teaspoon of each of the following spices salt, garlic powder, onion powder, paprika. Toss and bake for about 20-25 minutes.
  • Heat oil in a large skillet over medium low heat.
  • Add the diced bell pepper and onion to the skillet. Cook for 10 to 12 minutes, stirring often, until the onion and pepper start to caramelize.
  • Add the grass fed beef to the skillet and break it apart.
  • Cook for 7 to 9 minutes, stirring often, until the beef is browned and cooked through.
  • Add the minced garlic, salt, paprika, garlic powder, and onion powder. Stir until the beef and vegetables are evenly coated in the warm seasoning.
  • Add the spinach and stir until just wilted.
  • Remove everything from heat and top each serving with diced avocado and Feta.

Notes

Dice the sweet potato small so it gets tender without a long cook time
Let the beef brown well for deeper flavor
Add the spinach near the end so it stays tender
Add the avocado right before serving
