Ingredients
2 Cups of Unsweetened Shredded Coconut
1/2 Cup of Sweetened Condensed Milk
1/2 Teaspoon of Vanilla Extract
Pinch of Salt
24 Whole Almonds
1 1/2 Cups of Semi-Sweet Chocolate Chips
1 Tablespoon of Coconut Oil
Instructions

In a mixing bowl, combine shredded coconut, condensed milk, vanilla extract, and salt. Stir until well mixed.

Scoop about 2 tablespoons of the mixture and shape into rectangular logs. Place them on a parchment-lined baking sheet.

Gently press 2 almonds on top of each coconut log.

Refrigerate the shaped bars for at least 30 minutes, or freeze for 15–20 minutes until firm.

In a double boiler or microwave-safe bowl, melt the chocolate chips and coconut oil (if using) until smooth. Stir frequently to avoid burning.

Using a fork or dipping tool, dip each bar into the melted chocolate, coating all sides. Let excess chocolate drip off, then place back on the parchment.

Chill the dipped bars in the fridge for 15–20 minutes until the chocolate hardens completely.
Notes
- For a sweeter bar, use sweetened shredded coconut instead of unsweetened.
- To help the coconut mixture stick together, press it firmly when shaping.
- Keep bars chilled until ready to serve to prevent melting.
- Store in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.
