Description

These homemade Almond Joy bars are a delicious recreation of the classic candy. With a chewy coconut center, whole almonds, and a rich chocolate coating, they’re the perfect balance of texture and flavor. Free from artificial ingredients and customizable for dietary needs, these treats bring a nostalgic bite with a homemade touch.

Ingredients

  • 2 Cups of Unsweetened Shredded Coconut
  • 1/2 Cup of Sweetened Condensed Milk
  • 1/2 Teaspoon of Vanilla Extract
  • Pinch of Salt
  • 24 Whole Almonds
  • 1 1/2 Cups of Semi-Sweet Chocolate Chips
  • 1 Tablespoon of Coconut Oil

Instructions

  • In a mixing bowl, combine shredded coconut, condensed milk, vanilla extract, and salt. Stir until well mixed.
  • Scoop about 2 tablespoons of the mixture and shape into rectangular logs. Place them on a parchment-lined baking sheet.
  • Gently press 2 almonds on top of each coconut log.
  • Refrigerate the shaped bars for at least 30 minutes, or freeze for 15–20 minutes until firm.
  • In a double boiler or microwave-safe bowl, melt the chocolate chips and coconut oil (if using) until smooth. Stir frequently to avoid burning.
  • Using a fork or dipping tool, dip each bar into the melted chocolate, coating all sides. Let excess chocolate drip off, then place back on the parchment.
  • Chill the dipped bars in the fridge for 15–20 minutes until the chocolate hardens completely.

Notes

  • For a sweeter bar, use sweetened shredded coconut instead of unsweetened.
  • To help the coconut mixture stick together, press it firmly when shaping.
  • Keep bars chilled until ready to serve to prevent melting.
  • Store in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.
  • Use high-quality chocolate for best flavor and texture.
