1 Cup of Almond Flour
1/4 Cup of Unsweetened Shredded Coconut
1 Tablespoon of Ground Flaxseed
1 Zest of Lemon
2 Tablespoons of Fresh Lemon Juice
2 Tablespoons of Maple Syrup or Raw Honey
1 Tablespoon of Coconut Oil, Melted
1/2 teaspoon of Vanilla Extract
1 Pinch of Salt

Mix it all up:In a bowl, combine all ingredients and stir until a dough forms. If it's too wet, add a bit more almond flour. If too dry, add a touch more lemon juice.

Form into bites:Roll into small balls (about 1 inch in size).

Chill:Place in the fridge for 30 minutes to set.

Store:Keep them in an airtight container in the fridge for up to a week (or freeze for longer storage).
Notes
- Optional: poppy seeds, turmeric, or maca powder for an extra boost!
- Add a pinch of turmeric (for anti-inflammatory benefits) or maca powder (for energy and hormone support).
- A few drops of lemon extract will really brighten the citrus flavor if your lemons aren’t super zesty.
