Description

During the follicular phase, your body thrives on light, vibrant flavors and nutrient-dense foods that fuel rising energy levels and support estrogen metabolism. These no-bake bites are perfect for that!

Ingredients

  • 1 Cup of Almond Flour
  • 1/4 Cup of Unsweetened Shredded Coconut
  • 1 Tablespoon of Ground Flaxseed
  • 1 Zest of Lemon
  • 2 Tablespoons of Fresh Lemon Juice
  • 2 Tablespoons of Maple Syrup or Raw Honey
  • 1 Tablespoon of Coconut Oil
  • 1/2 teaspoon of Vanilla Extract
  • 1 Pinch of Salt

Instructions

  • Mix it all up:
    In a bowl, combine all ingredients and stir until a dough forms. If it's too wet, add a bit more almond flour. If too dry, add a touch more lemon juice.
  • Form into bites:
    Roll into small balls (about 1 inch in size).
  • Chill:
    Place in the fridge for 30 minutes to set.
  • Store:
    Keep them in an airtight container in the fridge for up to a week (or freeze for longer storage).

Notes

  • Optional: poppy seeds, turmeric, or maca powder for an extra boost!
  • Add a pinch of turmeric (for anti-inflammatory benefits) or maca powder (for energy and hormone support).
  • A few drops of lemon extract will really brighten the citrus flavor if your lemons aren’t super zesty.

  • Roll finished bites in shredded coconut or crushed almonds for a decorative finish.
  • Serve chilled—they hold together better and the flavors pop more.
  • Store in an airtight container in the fridge for up to 7 days or freeze for 1–2 months.
