Pasta and Meat

  • 16 Ounces of Pasta
  • 1 Tablespoon of Olive Oil
  • 1 LB of Ground Turkey
  • 2 Minced of Garlic Clove(s)
  • 1 Teaspoon of Oregano
  • 1 Teaspoon of Smoked Paprika
  • 1 Teaspoon of Salt
  • 1/4 Teaspoon of Black Pepper
  • 2 Cups of Spinach
  • 1/4 Cup of Sundried Tomatoes
  • 1/2 Cup of Pasta Water

Garlic Tahini Drizzle

  • 1/4 Cup of Tahini
  • 2 Tablespoons of Fresh Lemon Juice
  • 1 Garlic Clove(s)
  • 1/4 Teaspoon of Salt
  • 2 Tablespoons of Filtered Water

Instructions

  • Bring a large pot of water to a boil and cook the pasta according to the package directions.
  • Heat olive oil in a large skillet over medium heat.
  • Add ground turkey, minced garlic, oregano, smoked paprika, sea salt, and black pepper to the skillet.
  • Cook for 8 to 12 minutes, breaking up the turkey as it cooks, until fully cooked through.
  • Reserve 1/2 cup pasta water. Drain the pasta and add it to the skillet along with the reserved water.
  • Add chopped spinach and cook for 2 to 3 minutes, until wilted.
  • Stir in the sun dried tomatoes or roasted red peppers if using.
  • In a small mixing bowl, whisk together tahini, lemon juice, grated garlic, sea salt, and 2 tablespoons of water until smooth.
  • For a thicker tahini drizzle, add the water slowly and stop once it reaches the texture you want.
  • Drizzle the garlic tahini sauce over the pasta right before serving.

Notes

Tips: Add the pasta water slowly so the pasta loosens without turning watery. Use sun dried tomatoes for a richer flavor or roasted red peppers for a sweeter flavor. Keep the tahini drizzle slightly thick so it coats the pasta instead of sinking to the bottom. Taste the turkey mixture before serving and adjust the salt only if needed.
