Ingredients
Bowl
1 Cup of Jasmine Rice
2 Cups of Filtered Water, Or Chicken Bone Broth
2 Tablespoons of Olive Oil
a Small of Onion, Yellow, Diced
1 Large of Bell Pepper(s), Red, diced
1 lb of Ground Turkey
3 Minced of Garlic Clove(s)
1 Teaspoon of Oregano, Dried
1 Teaspoon of Basil, Dried
1 Teaspoon of Salt
1/2 Cup of Bone Broth, Chicken, Or Water
2 Cups of Spinach
1/4 Cup of Fresh Parsley, Chopped
1/2 Cup of Feta, Crumbled
Lemon Garlic Sauce
1/2 Cup of Yogurt, Plain Greek
2 Tablespoons of Fresh Lemon Juice
1/2 Teaspoon of Garlic Powder
1/4 Teaspoon of Salt
2 Tablespoon of Filtered Water
Instructions

Add the jasmine rice and 2 cups water or chicken bone broth to a medium saucepan and bring to a boil

Dice the bell pepper and onion. Chop the parsley. Mince the garlic.

Reduce the heat to low, cover, and cook for 15 minutes or until the water is absorbed

Remove the saucepan from the heat and let the rice rest covered for 10 minutes

Heat the olive oil in a large skillet over medium heat

Add the onion and red bell pepper and cook for 4 to 5 minutes until tender

Add the ground turkey and cook for 6 to 8 minutes, breaking it apart with a wooden spoon, until fully cooked

Add the garlic, oregano, basil, and salt and cook for 1 minute

Pour in the chicken broth or water and simmer for 3 to 4 minutes until the turkey is juicy and coated in the seasonings

Add the spinach and cook for 1 to 2 minutes until tender and bright green

Remove the skillet from the heat and stir in the parsley

To a small bowl, add the Greek yogurt, lemon juice, garlic powder, salt, water and whisk until creamy.

Fluff the jasmine rice with a fork and divide it among four bowls

Top the rice with the ground turkey and red bell pepper mixture

Sprinkle the crumbled feta cheese over each bowl

Drizzle the lemon garlic sauce over each bowl as desired and serve
Notes
Use chicken broth instead of water for more flavor
Cut the red bell pepper into evenly sized pieces so it cooks consistently
Add another tablespoon of water if the lemon garlic sauce needs to be thinner
Keep the skillet at medium heat so the turkey stays juicy and tender
