Ingredients
Protein Bite
- 1/3 Cup of Cashew Butter
- 1/4 Cup of Maple Syrup
- 1/2 Teaspoon of Organic Peppermint Extract
- 1/2 Cup of Almond Flour
- 1/4 Cup of Vanilla Whey Protein Powder
- 1/8 Teaspoon of Salt
- 2 Tablespoons of Semi-Sweet Chocolate Chips
- 1 Teaspoon of Milk
Chocolate Coating
- 1 Cup of Semi-Sweet Chocolate Chips
- 1 Teaspoon of Coconut Oil
- 1/8 Teaspoon of Organic Peppermint Extract
Garnish
- 1/2 Teaspoon of Salt

Instructions

In a mixing bowl, combine cashew butter, maple syrup, and peppermint extract until smooth.

Add almond flour, protein powder, and salt. Mix until a soft dough forms.

Press the dough together with your hands. If it feels too thick, add 1 tsp milk and mix again.

Fold in chocolate chips until evenly distributed.

Roll into 8 to 10 even balls. Place in the fridge for 20 minutes to firm up.

In a small saucepan over medium low heat, melt chocolate chips with coconut oil, stirring until smooth. Remove from heat and add Peppermint Extract.

Roll each chilled ball in the melted chocolate until fully coated.

Sprinkle with flaky salt.
