Ingredients
2 Sweet Potato(es)
1 Tablespoon of Olive Oil
2 Tablespoons of Maple Syrup
1 Teaspoon of Ground Cinnamon
1/2 Teaspoon of Salt
Instructions

Preheat the oven to 400°F.

Line a baking sheet with unbleached parchment paper.

Wash and thoroughly dry the sweet potatoes.

Cut each sweet potato in half lengthwise.

Brush the cut sides evenly with olive oil.

Pour the maple syrup onto the parchment paper in four portions where the sweet potato halves will sit.

Sprinkle the cinnamon and salt evenly over the maple syrup.

Place each sweet potato half cut side down directly onto the maple cinnamon mixture.

Bake for 1 hour until the cut sides are crisp and deeply caramelized and the centers are completely soft.

Let the sweet potatoes rest for 5 minutes.

Carefully lift them from the parchment paper with a thin spatula and serve with the caramelized sides facing up.
Notes
Tips:
Dry the sweet potatoes completely so excess moisture does not interfere with caramelization
Keep the maple syrup directly beneath the cut sides so it does not spread and burn
Do not move the sweet potatoes while they bake because uninterrupted contact creates the crisp surface
Lift the sweet potatoes carefully with a thin spatula to preserve the candied edges
