Ingredients

\1 Tablespoon of Olive Oil
\1 lb of Ground Turkey
\1 Small of Onion, Diced
\3 Garlic Clove(s), Minced
\1 Teaspoon of Oregano, Dried
\1 Teaspoon of Salt
\1 Cup of Quinoa, Rinsed
\2 Cup of Bone Broth, Chicken
\1 Medium of Zucchini, Diced
\2 Cups of Spinach
\2 Tablespoons of Fresh Lemon Juice
\2 Tablespoons of Fresh Parsley

Instructions

  1. Heat the olive oil in a large skillet over medium heat
  2. Add the ground turkey and cook for 6 to 8 minutes, breaking it into small pieces until fully cooked
  3. Add the onion and cook for 4 minutes until softened
  4. Add the garlic, oregano, and salt and cook for 1 minute
  5. Stir in the quinoa until evenly combined
  6. Pour in the chicken broth and add the zucchini
  7. Bring the mixture to a gentle simmer
  8. Cover and cook for 15 minutes
  9. Stir in the spinach and cook for 2 to 3 minutes until wilted
  10. Stir in the lemon juice and parsley
  11. Remove from the heat and serve
