Maple Vanilla Pecan Protein Bites

Ingredients

Protein Bites

\1/4 Cup of Almond Butter, Creamy
\1/4 Cup of Maple Syrup
\1 1/2 Teaspoons of Vanilla Extract
\1 Cup of Almond Flour
\1/4 Cup of Vanilla Whey Protein Powder
\1/3 Cup of Pecans, Blended

Chocolate Coating

\1 Cup of Semi-Sweet Chocolate Chips
\1 Teaspoon of Coconut Oil

Garnish

\2 Teaspoons of Pecans, Crushed or Pieces
\1 Teaspoon of Maple Sugar, Or Vanilla Sugar
\1/8 Teaspoon of Salt

Instructions

  1. In a large mixing bowl combine creamy almond butter, maple syrup, and vanilla extract.
  2. Blend the pecans in a blender, make sure it measures to 1/3 cup.
  3. Add almond flour, pecans, salt and vanilla protein powder into the bowl and stir until combined.
  4. Divide into 12 equal portions, roll into bites, and place directly into a glass storage container in the refrigerator for 20 minutes.
  5. In a saucepan add the semisweet chocolate chips and coconut oil and melt over low heat until smooth.
  6. Coat each chilled bite in the semisweet chocolate and return directly to the glass storage container.
  7. Immediately garnish with a sprinkle of salt, the maple or vanilla sugar and the chopped or crushed pecans.
  8. Place back in the refrigerator for at least 20 minutes. Then enjoy!

Notes
