1/2 Teaspoon of Organic Peppermint Extract
1/2 Cup of Almond Flour
1/4 Cup of Vanilla Whey Protein Powder
1/8 Teaspoon of Salt

1 Teaspoon of Milk, If Needed
Chocolate Coating
1 Cup of Semi-Sweet Chocolate Chips
1 Teaspoon of Coconut Oil
1/8 Teaspoon of Organic Peppermint Extract
Garnish
1/2 Teaspoon of Salt, Flaky
Instructions
-
In a mixing bowl, combine cashew butter, maple syrup, and peppermint extract until smooth.
-
Add almond flour, protein powder, and salt. Mix until a soft dough forms.
-
Press the dough together with your hands. If it feels too thick, add 1 tsp milk and mix again.
-
Fold in chocolate chips until evenly distributed.
-
Roll into 8 to 10 even balls. Place in the fridge for 20 minutes to firm up.
-
In a small saucepan over medium low heat, melt chocolate chips with coconut oil, stirring until smooth. Remove from heat and add Peppermint Extract.
-
Roll each chilled ball in the melted chocolate until fully coated.
-
Sprinkle with flaky salt.
-
Place back in the fridge until the coating sets.
Notes
Use less peppermint extract at first, then adjust to avoid overpowering flavor.
If dough feels too thick, add 1 tsp milk instead of adding more maple syrup.
Chill before coating so the balls hold their shape.
Keep balls chilled for the best texture.
