Ingredients
2 Cups of Milk, Divided
2 Cups of Heavy Whipping Cream
2 Teaspoons of Vanilla Extract
1 1/2 Tablespoons of Grass-fed Beef Gelatin
2 Tablespoons of Raw Honey
Instructions

In a mixing bowl, add 1 cup milk, the heavy whipping cream, honey and vanilla extract.

Pour the remaining 1 cup milk into a small saucepan and sprinkle the gelatin evenly over the top. Let it sit for 5 minutes to bloom.

Add the sugar to the saucepan.

Place the saucepan over very low heat and whisk continuously until the gelatin and sugar fully dissolve and the mixture is completely smooth with no clumps. Do not let it get hot, boil, or simmer.

Slowly pour the warm mixture into the mixing bowl while whisking constantly until fully combined and smooth.

Pour the mixture into 8 ramekins or molds, or into an 8x8 baking dish.

Refrigerate for at least 1 hour or longer, until fully set.

To serve, gently loosen and pop out of molds or slice from the dish, then top as desired.
Notes
Tips:
Use at least 1 cup milk in the saucepan so the gelatin fully dissolves smoothly.
Keep heat very low at all times to protect texture and prevent separation.
Whisk constantly while heating to avoid any clumping.
Pour slowly into the bowl while whisking so the mixture stays fully emulsified.
